Fried Rice

Welcome back =] so on my last post i made Pineapple chicken with a side of fried rice, i wasn't planning on posting a blog about the fried rice until i had already started making it so its a little different from the others so feel free to ask any questions under the comment section.

Here is what you will need....

3 cups of long grain white rice. 6 cups of water, 1 individual packet of spam chopped, 2 cloves of garlic minced, 1/2 cup of soy sauce, 6 green onions chopped, 1/2 a carrot minced, 1/3 cup of frozen peas, salt and pepper to taste ( i use about 1 teaspoon of salt because the soy sauce has a lot of sodium, and 1/2 teaspoon of pepper.

In a medium sized pot pour in the rice and add the water. Bring to a boil. Once the rice comes to a boil, cover and reduce heat to low and allow to simmer for about 20 minutes. Every stove is different, i unfortunately use an electric stove so it may vary if your stove is gas, so just keep an eye on it. If the water evaporates before the rice is fully cooked, add a little bit more water as needed.
When the rice is finished turn off the flame and leave covered. Now chop the spam in to small pieces like so...


In a frying pan add about two tablespoons of oil, or enough to cover the pan and add the chopped packet of spam and minced garlic.
Cook until the spam is browned a little bit, if you like the spam a little crunchy or really cooked i would suggest adding the garlic when the spam is at pretty much at that point, because if it cooks too long it will burn.Once the garlic and spam has cooked for about two minutes or so, add in the rice and fry together for about 5 minutes. If you would like to add ginger root in your rice (which i do from time to time to mix things up, add in two thick slices to add the ginger flavor to your rice, but don't forget to remove them once your dish is finished or someone will get a very strong tasting surprise in their portion.
Now that the rice has a bit of a crunch to it, add the green onions carrots and peas.
Mix thoroughly, then add in the soy sauce. Then mix again, if this isn't enough soy sauce for your tasting, or there the rice isn't completely browned add some as needed. Sprinkle with salt and pepper to taste. I usually don't measure I just cook by eye balling everything so i am trying my best to make it as accurate as possible for all my beginners =]
I don't eat eggs because I have never really preferred the taste, but if you like your rice with eggs, this would be the time to add some to the rice.
In a separate bowl, add two eggs, and whisk.
Now in the center of the rice make a empty space and pour the egg mixture in the center. Cook the egg until it becomes a solid and no longer looks "wet". when the eggs reach this point go ahead and give the rice a good stir to mix the eggs into the rice.
Once all the rice is fully mixed this is what you end up with =]


** you can substitute the spam for chicken, pork or shrimp =] If you make any changes to your rice please let me know! I'm always willing to try new things, or experiment with new ingredients.

I absolutely enjoy cooking and thats great that u do too! Thanks for the recipe frances! when I make it I will make sure to post a pic, probly on my fb :)

  3. Aw your welcome Carla :) I'm glad you like it! And sister I know you do.. But you know me Nd my lack of love for eggs. I'll make her anything she wants while she's here :)
