Chicken Alfredo Bow Tie Pasta with Peppers

My Fiance and I ate at Bucca Di Beppo a while ago and tried the Alfredo supremo which is Alfredo pasta with fettuccine noodles broccoli and peppers, I made my own rendition of this. It's my dad's favorite. It is quick, simple and a meal i go to if i need to make something delicious and in a hurry =]

Here is what you will need...

2 Chicken Breasts, 1 16oz box of bow tie pasta, 8oz cream cheese, 1 red bell pepper, 1 green bell pepper,1 tablespoon salt, 1/4 teaspoon pepper, 2 cloves of garlic, 2-3 cups of low fat milk (I use 2%), 1 cup of Parmesan cheese, red pepper flakes (optional)

The bag with red stuff is frozen red bell peppers, whenever they go on sale i always buy a bunch and freeze them for later use, because during certain times of the year they can get kind of pricey.
In a large pot, fill it with water and bring the water to a boil and put the chicken into the water and boil it for about 30-40 minutes.
Once the chicken is finished, cut the chicken into strips then in to cube like pieces.
Set the chicken aside and cut the bell pepper in long strips.
Once you do the same to the red bell peppers go ahead and spray your pan with a cooking spray or add a small amount of oil and saute your peppers on medium heat until tender. Once they are finished, turn off the flame and set them aside.
Fill up another bot and bring your water to boil. Add in your noodles and cook according to the directions on the box.Drain your noodles.
Now for the good stuff, the sauce! In a large pan add 2 tablespoons of oil, and throw in the garlic.
Fry the garlic on a medium low heat so the oil can absorb the flavor of the garlic.
once you cook the garlic for a minute or two add in the cream cheese and 2 cups of milk. I add in the milk at the same time so the cream cheese doesn't burn.
As you can see i accidentally cooked the garlic a liiiiitle too long ha ha so if you make the same mistake i did just remove them from the pan as soon as possible to avoid discoloring your sauce. Break apart the cream cheese with your whisk until you form a creamy sauce.
keep whisking.... were still not creamy.
This is what your looking for. no cream cheesy lumps. At this point add in the salt and the pepper. And my favorite part... the CHEESE =] yuummmmm. Whisk together until blended.
Now that you have an Alfredo sauce add the chicken cubes to the pan, and mix it all together really well to coat the chicken.
Now add in your sauteed peppers & mix well just like you did to the chicken. =]
Now unfortunately my pan wasn't as big as i expected so i added the noodles to a large serving bowl minus about 1-2 cups of noodles because if i would have added all the noodles then the sauce it wouldn't have had enough sauce. If its too saucy gradually add in more noodles, but the rule of thumb is you can always add but you cant take away.
Mix the sauce and noodles well then sneak in a bite ;)
Now that you have snuck in a bite its not going to be enough, your going to want a whole plate.
I'm not sure if you can tell or not but i added some red pepper flakes to mine to give it that extra kick =]
