Im a young mom on the go, and always busy with school or chasing after my son. Because of that my recipes have to pretty much be practical and easy to make on an everyday basis.Nothing fancy. Baked Cheese Filled Pasta Shells
Hi, so this is my first post and i thought I'd share with you one of my fiances favorite recipes... he doesn't like to eat many different types of food but if you make anything Italian, well he will eat it (as long as it has nothing to do with sea food)
okay....so here are some items that you are going to need
3 cups of pasta sauce, 1 tablespoon of pepper, 1 tablespoon of salt, 1 large egg, 1 cup of Parmesan cheese, 1 cup of shredded mozzarella cheese, 16oz of Ricotta cheese, 1 tablespoon of ground oregano, 2 cloves of minced garlic, Jumbo pasta shells and love :)
First you need to add the Ricotta cheese, egg, salt, pepper, oregano and garlic to a medium sized bowl. Mix
oops! I almost forgot...The CHEEESEEEE. Add in the Parmesan and mozzarella cheese
Mix the cheese and at this time if you would like you can add in a veggie. I have used Zucchini or Chopped spinach. Today i think I'll add the spinach =]
I use frozen, but if you want, fresh is always welcome. If using fresh spinach chop into small pieces. If you want to use frozen like i like to do, because it is so much more simple i place the frozen spinach in a bowl or measuring cup, fill it with hot water to melt the ice then once the spinach has defrosted make sure you drain out all the excess water by squeezing it. Add it to the cheese mixture and now were ready to fill our shells =]
Boil the Jumbo pasta shells according to package. Usually about 15 minutes or until al dente. Now before filling the shells add about 1 cup of pasta sauce to the baking dish to prevent the shells from sticking to the bottom of the dish.
Now that your dish is filled with sauce, you can start filling your shells with the cheese mixture.Once you fill a shell with the mixture place it in the pan until its all filled up.
Were almost finished.! Just pour sauce over the shells like so (enough to cover the shells) and bake for 50 minutes at 400 degrees.
And when the 50 minutes is up, bake the shells for an additional 10 minutes covered in mozzarella cheese =] Smells delicious doesn't it?
Once the 10 minutes is up remove the dish from the oven and let sit for about 10-15 minutes so the cheese can set. If you don't let it set the cheese mixture will be runny and slide right out of the shell.
and Voila! We-Are-FINISHED! Just sprinkle with some parm.cheese and some red pepper flakes if you like a little spice =] Enjoy.
